Type the first letters of the component (entity, configuration, component) name and use the "Trigger Suggest" command. Component instances are preceded by the "Instance" keyword.

You can customize what gets generated from File > Preferences > Settings > Extensions > DVT > Text Editor > VHDL > Content Assist > Auto-Instantiation.
